Description
Apple cider whoopie pies with caramel are soft, cake-like cookies with a sweet and tangy filling, drizzled with homemade caramel.

- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup apple cider, reduced to 1/4 cup
- For the Filling: 1 cup (2 sticks) unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup milk
- For the Caramel: 1 cup granulated sugar
- 1/4 cup water
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter
- 1/4 teaspoon salt
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract and reduced apple cider.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop by rounded tablespoons onto baking sheets.
- Bake for 8-10 minutes, or until edges are lightly golden.
- Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
- For the Filling: In a bowl, cream together butter and powdered sugar until light and fluffy. Beat in vanilla extract and milk until smooth.
- For the Caramel: In a saucepan, combine sugar and water. Cook over medium heat, without stirring, until mixture turns amber.
- Remove from heat and stir in heavy cream, butter, and salt.
- Let cool slightly, then drizzle over filled whoopie pies.
- To Assemble: Spread filling on the flat side of one cookie and top with another cookie to create a sandwich. Drizzle with caramel.
Notes
- Reduce apple cider for a more intense flavor.
- Cool cookies completely before filling.
- Store in an airtight container.
