Description

Apple cider whoopie pies with caramel are soft, cake-like cookies with a sweet and tangy filling, drizzled with homemade caramel.


Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple cider, reduced to 1/4 cup
  • For the Filling: 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • For the Caramel: 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract and reduced apple cider.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop by rounded tablespoons onto baking sheets.
  6. Bake for 8-10 minutes, or until edges are lightly golden.
  7. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  8. For the Filling: In a bowl, cream together butter and powdered sugar until light and fluffy. Beat in vanilla extract and milk until smooth.
  9. For the Caramel: In a saucepan, combine sugar and water. Cook over medium heat, without stirring, until mixture turns amber.
  10. Remove from heat and stir in heavy cream, butter, and salt.
  11. Let cool slightly, then drizzle over filled whoopie pies.
  12. To Assemble: Spread filling on the flat side of one cookie and top with another cookie to create a sandwich. Drizzle with caramel.
