Ingredients

- 2 medium apples, cored and diced
- 1/2 cup walnuts, chopped
- 1/4 cup crumbled blue cheese (optional)
- 1/4 cup dried cranberries
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine salad greens, diced apples, chopped walnuts, blue cheese (if using), and dried cranberries.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, and Dijon mustard. Season with salt and pepper.
- Pour dressing over the salad and toss gently to combine.
- Serve immediately.
