Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/2 cup packed brown sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line a muffin tin with paper liners.
  3. In a large bowl, whisk together flour, oats, baking soda, baking powder, salt, and cinnamon.
  4. In a separate bowl, combine applesauce, brown sugar, oil, egg, and milk.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Fill muffin cups about 2/3 full.
  7. Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
