Make applesauce oatmeal muffins quickly.

- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup unsweetened applesauce
- 1/2 cup packed brown sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1 cup milk
Instructions
- Preheat oven to 375°F (190°C).
- Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, oats, baking soda, baking powder, salt, and cinnamon.
- In a separate bowl, combine applesauce, brown sugar, oil, egg, and milk.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fill muffin cups about 2/3 full.
- Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
Notes
- Adjust baking time based on your oven.
- Store muffins in an airtight container.
