Instructions
- In a large bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- In a separate bowl, cream together butter and brown sugar until light and fluffy.
- Beat in egg and molasses.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Divide dough in half, flatten into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat oven to 375°F (190°C).
- Roll out dough on a lightly floured surface to 1/4-inch thickness.
- Cut out gingerbread men shapes using cookie cutters.
- Place cookies on baking sheets lined with parchment paper.
- Bake for 8-10 minutes, or until edges are lightly golden brown.
- Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
- Decorate with royal icing.
