Description

Sweet and salty Caramel Pretzel Bites are perfect for snacking.


Ingredients

  • 2 teaspoons butter, softened
  • 4 cups pretzel sticks
  • 21/2 cups pecan halves, toasted
  • 21/4 cups packed brown sugar
  • 1 cup butter, cubed
  • 1 cup corn syrup
  • 1 can (14 ounces) sweetened condensed milk
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 package (11-1/2 ounces) milk chocolate chips
  • 1 tablespoon plus 1 teaspoon shortening, divided
  • 1/3 cup white baking chips

Instructions

  1. Preheat oven to 350°F.
  2. Spread softened butter on a large baking sheet.
  3. Arrange pretzel sticks in a single layer on prepared sheet.
  4. Top with pecan halves.
  5. In a heavy saucepan, combine brown sugar, butter, corn syrup, condensed milk, and salt.
  6. Bring to a boil over medium heat, stirring constantly.
  7. Cook and stir for 5 minutes, or until a candy thermometer reads 235°F.
  8. Remove from heat; stir in vanilla.
  9. Pour caramel mixture over pretzels and pecans.
  10. Bake for 12-15 minutes, or until caramel is bubbly.
  11. Remove from oven and let cool completely.
  12. In a microwave-safe bowl, melt milk chocolate chips and 1 tablespoon shortening; stir until smooth.
  13. Spread over cooled caramel.
  14. In another microwave-safe bowl, melt white baking chips and 1 teaspoon shortening; stir until smooth.
  15. Drizzle over milk chocolate layer.
  16. Let stand until set, or refrigerate for faster setting.
  17. Break into pieces.

Notes

  • Use different nuts or candies for variation.
  • Watch carefully while cooking the caramel to prevent burning.
