Description

Decadent chocolate cookies with a gooey cherry cordial center, topped with melted chocolate and sprinkles.


Ingredients

  • 1 and 1/2 cup all purpose flour (197g)
  • 1/2 cup unsweetened cocoa powder (55g)
  • 1 tablespoon powdered milk
  • 1 teaspoon espresso powder
  • 2 teaspoons cornstarch
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup vegetable shortening (113g)
  • 1/2 cup light brown sugar (115g), packed
  • 1/2 cup granulated sugar (110g)
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons whole milk
  • 10 Cherry Cordials
  • 1/4 cup chocolate melting wafers
  • 1 tablespoon sprinkles

Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. Whisk together flour, cocoa powder, powdered milk, espresso powder, corn starch, salt, and baking soda in a medium bowl.
  3. Partially melt shortening in a microwave-safe bowl.
  4. Cream shortening and sugars in a large bowl until smooth.
  5. Add egg and vanilla extract; beat until incorporated.
  6. Add half the dry ingredients to the wet ingredients; beat until incorporated. Add remaining dry ingredients and milk; mix until combined.
  7. Portion dough into 10 even portions. Press thumb into the middle of each to create a well. Place a cherry cordial in each well. Use your hands to work the dough around the cordial, sealing it.
  8. Place cookies on the baking sheet, keeping the cordial upright. Place 2 inches apart.
  9. Bake for 8 to 9 minutes until edges are set.
  10. Cool on the pan for 15 minutes, then transfer to a wire rack to cool completely.
  11. Melt chocolate melting wafers in the microwave. Drizzle over cookies and top with sprinkles.

Notes

  • Cookies are very soft after baking; they will firm up as they cool.
  • Store in an airtight container.
