Instructions
- Preheat oven to 200°F (95°C).
- In a clean, dry bowl, beat egg whites with an electric mixer until soft peaks form.
- Gradually add sugar, beating until stiff, glossy peaks form.
- Beat in cream of tartar and vanilla extract.
- Divide meringue into separate bowls and tint with food coloring.
- Pipe or spoon meringue onto baking sheets lined with parchment paper.
- Decorate with sprinkles, if desired.
- Bake for 60-90 minutes, or until cookies are dry and crisp.
- Turn off oven and let cookies cool completely inside.
