A festive Christmas pie filled with creamy vanilla custard and topped with a colorful mix of fresh berries.
Ingredients

- 1 pre-made pie crust
- 2 cups milk
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1 tsp vanilla extract
- 2 egg yolks
- 1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)
- 2 tbsp powdered sugar (optional, for dusting)
Instructions
- Preheat oven to 350°F (175°C).
- Bake pie crust according to package directions; let cool.
- In a saucepan, whisk together milk, sugar, cornstarch, and egg yolks.
- Cook over medium heat, stirring constantly, until mixture thickens and comes to a simmer.
- Remove from heat and stir in vanilla extract.
- Pour custard into cooled pie crust.
- Arrange mixed berries on top of the custard.
- Dust with powdered sugar, if desired.
- Refrigerate for at least 2 hours before serving.
Notes
- Use your favorite combination of berries.
- For a richer custard, use whole milk or add a tablespoon of butter.
- Store leftover pie in the refrigerator.
