Description

A festive Christmas pie filled with creamy vanilla custard and topped with a colorful mix of fresh berries.


Ingredients

  • 1 pre-made pie crust
  • 2 cups milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 tsp vanilla extract
  • 2 egg yolks
  • 1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 2 tbsp powdered sugar (optional, for dusting)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Bake pie crust according to package directions; let cool.
  3. In a saucepan, whisk together milk, sugar, cornstarch, and egg yolks.
  4. Cook over medium heat, stirring constantly, until mixture thickens and comes to a simmer.
  5. Remove from heat and stir in vanilla extract.
  6. Pour custard into cooled pie crust.
  7. Arrange mixed berries on top of the custard.
  8. Dust with powdered sugar, if desired.
  9. Refrigerate for at least 2 hours before serving.
