Ingredients

  • 1 cup dried cranberries
  • 1 cup raisins
  • 1 cup currants
  • 1/2 cup mixed peel
  • 1/2 cup chopped walnuts
  • 1 apple, peeled and grated
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon mixed spice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup brown sugar
  • 1/2 cup breadcrumbs
  • 1/2 cup suet, shredded
  • 2 eggs, beaten
  • 1/4 cup dark rum or brandy
  • 1/4 cup milk

Instructions

  1. Combine dried fruits, mixed peel, walnuts, and apple in a large bowl.
  2. In a separate bowl, mix flour, baking powder, salt, and spices.
  3. Add sugar, breadcrumbs, and suet to the dry ingredients.
  4. Pour the dry ingredients into the fruit mixture and mix well.
  5. Add beaten eggs, rum (or brandy), and milk. Stir until combined.
  6. Grease a pudding basin and pour the mixture into it.
  7. Cover the basin with parchment paper and foil, securing with string.
  8. Steam the pudding for 6-8 hours, ensuring the water doesn’t dry out.
  9. Let the pudding cool completely before unmolding.
  10. Serve warm with custard or cream.
