Description

Bake festive Christmas Red Velvet Cupcakes. These cupcakes are moist, flavorful, and topped with a creamy frosting.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cocoa powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ounce red food coloring
  • 1 teaspoon white vinegar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • 4 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • Sprinkles for decoration

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, baking soda, cocoa powder, and salt.
  3. In a separate bowl, combine buttermilk, oil, egg, vanilla extract, and red food coloring.
  4. Add wet ingredients to dry ingredients and mix until just combined.
  5. In a small bowl, mix vinegar and baking soda. Add to batter and stir gently.
  6. Fill cupcake liners about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cupcakes cool in the tin for a few minutes before transferring to a wire rack to cool completely.
  9. For the frosting, beat butter, powdered sugar, cream cheese, and vanilla extract until smooth and creamy.
  10. Frost cupcakes and decorate with sprinkles.

Notes

  • For a richer flavor, use cake flour instead of all-purpose flour.
  • Adjust the amount of red food coloring to your preference.
  • Store cupcakes in an airtight container at room temperature.
