Description

Festive sugar cookie bars perfect for Christmas.


Ingredients

Scale
  • 250 g unsalted butter
  • 200 g caster sugar
  • 1 tsp vanilla extract
  • 1 medium egg
  • 425 g plain flour
  • 150 g unsalted butter (decoration)
  • 300 g icing sugar (decoration)
  • 1 tsp vanilla extract (decoration)
  • Pinch of sea salt (decoration)
  • Food colouring (decoration)
  • Sprinkles (decoration)

Instructions

  1. Preheat the oven to 190 degrees c/170 degrees c fan and line a 9 by 9 inch tin with parchment paper.
  2. Beat the butter and sugar together in a bowl until fluffy.
  3. Add the vanilla and egg and mix again.
  4. Add the flour and beat to a dough.
  5. Press into the base of the tin firmly.
  6. Bake for 20-22 minutes and then leave to cool fully.
  7. In a new bowl, beat the butter on its own until smooth.
  8. Add the icing sugar and beat again.
  9. Add the vanilla, salt and colouring.
  10. Spread and fluff over the bars and decorate with the sprinkles.

Notes

  • These bars will last 4-5 days at room temperature.
  • These will freeze for 3 plus months.
  • You can flavour the sugar cookie bars with any flavouring you prefer – lemon is delicious.
  • You can flavour the frosting as well really easily.
