Description
Festive sugar cookie bars perfect for Christmas.
Ingredients

- 250 g unsalted butter
- 200 g caster sugar
- 1 tsp vanilla extract
- 1 medium egg
- 425 g plain flour
- 150 g unsalted butter (decoration)
- 300 g icing sugar (decoration)
- 1 tsp vanilla extract (decoration)
- Pinch of sea salt (decoration)
- Food colouring (decoration)
- Sprinkles (decoration)
Instructions
- Preheat the oven to 190 degrees c/170 degrees c fan and line a 9 by 9 inch tin with parchment paper.
- Beat the butter and sugar together in a bowl until fluffy.
- Add the vanilla and egg and mix again.
- Add the flour and beat to a dough.
- Press into the base of the tin firmly.
- Bake for 20-22 minutes and then leave to cool fully.
- In a new bowl, beat the butter on its own until smooth.
- Add the icing sugar and beat again.
- Add the vanilla, salt and colouring.
- Spread and fluff over the bars and decorate with the sprinkles.
Notes
- These bars will last 4-5 days at room temperature.
- These will freeze for 3 plus months.
- You can flavour the sugar cookie bars with any flavouring you prefer – lemon is delicious.
- You can flavour the frosting as well really easily.
