  • Cinnamon Streusel Topping: 1/4 cup all-purpose flour, 2 tablespoons granulated sugar, 1 teaspoon ground cinnamon, 2 tablespoons cold unsalted butter, cut into small pieces

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together granulated sugar, brown sugar, and softened butter until light and fluffy.
  4. Beat in sour cream, egg, and vanilla extract.
  5. Gradually add dry ingredients to wet ingredients, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.
  6. Prepare streusel topping: In a small bowl, combine flour, sugar, and cinnamon. Cut in cold butter using a pastry blender or your fingers until mixture resembles coarse crumbs.
  7. Pour batter into prepared pan. Sprinkle streusel topping evenly over batter.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let cool in pan for 10 minutes before slicing and serving.
