- Cinnamon Streusel Topping: 1/4 cup all-purpose flour, 2 tablespoons granulated sugar, 1 teaspoon ground cinnamon, 2 tablespoons cold unsalted butter, cut into small pieces
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together granulated sugar, brown sugar, and softened butter until light and fluffy.
- Beat in sour cream, egg, and vanilla extract.
- Gradually add dry ingredients to wet ingredients, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.
- Prepare streusel topping: In a small bowl, combine flour, sugar, and cinnamon. Cut in cold butter using a pastry blender or your fingers until mixture resembles coarse crumbs.
- Pour batter into prepared pan. Sprinkle streusel topping evenly over batter.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool in pan for 10 minutes before slicing and serving.
Notes
- For a richer flavor, use brown butter in the cake batter.
- Store leftover cake in an airtight container at room temperature for up to 3 days.
- You can add nuts like walnuts or pecans to the streusel topping.
