Description

Enjoy homemade cinnamon rolls with a sweet dough, brown sugar filling, and cream cheese frosting.


Ingredients

  • 1 cup whole milk, warm
  • 1 tablespoons active dry yeast
  • 5 tablespoons granulated sugar
  • 2 large eggs
  • 3 & 1/4 cups all purpose flour, spooned and leveled
  • 1 teaspoon kosher salt
  • 1/2 cup butter, 1 stick, very soft (divided)
  • 1/4 cup butter, 1/2 stick, barely melted
  • 1/4 cup cream
  • 5 tablespoons brown sugar
  • 3/4 cup butter, 1 & 1/2 sticks, very soft
  • 1 cup plus 2 tablespoons brown sugar
  • 2 tablespoons cinnamon
  • 1/4 teaspoon kosher salt
  • 1/23/4 teaspoon cardamom, optional
  • 1 (8-oz) package cream cheese, softened
  • 1/2 cup butter, 1 stick, softened
  • 1 cup powdered sugar
  • 1/4 teaspoon kosher salt

Instructions

  1. Make the sweet dough: Warm milk, add yeast and sugar, let stand for 5 minutes.
  2. Add eggs and whisk until smooth.
  3. Combine flour and salt in a bowl.
  4. Add wet ingredients to dry ingredients and mix.
  5. Add butter gradually and mix until incorporated.
  6. Beat on medium low speed for 5 minutes until dough is silky.
  7. Grease a bowl, add dough, cover, and refrigerate for 2 hours or up to 2 days.
  8. Prepare the pan: Melt butter, add cream and brown sugar, and spread in the pan.
  9. Prepare the filling: Combine butter, brown sugar, cinnamon, salt, and cardamom.
  10. Boil water and prepare oven with a water bath.
  11. Roll out the dough on a floured surface.
  12. Spread filling on dough.
  13. Roll up the dough and seal.
  14. Cut into rolls and place in the prepared pan.
  15. Cover with sprayed plastic wrap.
  16. Let rise in the warm oven for 45 minutes.
  17. Preheat oven to 350 degrees F.
  18. Bake for 15-18 minutes until golden brown.
  19. Make the cream cheese frosting: Beat cream cheese and butter until fluffy. Add powdered sugar and salt and beat well.
  20. Let rolls cool, then spread with frosting.

Notes

  • Chilling the dough is essential.
  • Use an 11×17 inch baking sheet for best results.
  • Cardamom is recommended for the filling.
  • Do not skip spraying plastic wrap.
  • Use a thermometer to check internal temperature.
