Description
A light and fluffy coconut cloud cake.
Ingredients

- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup coconut milk
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a cake pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream together sugar and butter. Beat in eggs one at a time, then stir in coconut milk and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in shredded coconut.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
Notes
- For extra coconut flavor, use coconut extract in addition to vanilla.
- Garnish with extra shredded coconut or a dusting of powdered sugar.
