Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1 teaspoon pumpkin pie spice

  • 1 1/4 cups buttermilk
  • 1/4 cup melted butter
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  2. In another bowl, combine pumpkin puree, buttermilk, melted butter, egg, and vanilla extract.
  3. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  4. Preheat your waffle iron according to manufacturer’s instructions.
  5. Pour batter onto the hot waffle iron and cook until golden brown and crisp.
  6. Serve immediately with your favorite toppings.

Notes

  • For extra flavor, add chopped pecans or walnuts to the batter.
