- 1/4 cup melted butter
- 1 egg

Instructions
- Whisk together flour, baking powder, baking soda, salt, sugar, and pumpkin pie spice in a bowl.
- In another bowl, combine pumpkin puree, buttermilk, melted butter, egg, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
- Preheat your waffle iron according to manufacturer’s instructions.
- Pour batter onto the hot waffle iron and cook until golden brown and crisp.
- Serve immediately with your favorite toppings.
Notes
- For extra flavor, add chopped pecans or walnuts to the batter.
- You can substitute milk for buttermilk, but the waffles will be less tangy.
