Enjoy these delightful Cranberry Orange Muffins, perfect for breakfast or a snack.


Ingredients

  • 1/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour + 1 tablespoon divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup Dunkin’ Donuts Extra Extra Creamer
  • 1 1/2 cups cranberries divided

Instructions

  1. Preheat oven to 375 degrees F and line muffin pan with liners.
  2. Beat softened butter and sugar together in a large mixing bowl. Beat in egg, zest, and vanilla.
  3. In a separate bowl, whisk together 1 1/2 cups of the flour, baking powder, and salt. Add the flour mix and the creamer, alternating between the two 3 times until incorporated into the butter mix. Beat until completely combined.
  4. In a small bowl, stir together about 1 1/4 cup of the cranberries and the extra tablespoon of all-purpose flour. Gently fold cranberries into the batter.
  5. Add a 1/4 cup of batter to each muffin liner. Load up the tops of the muffins with remaining cranberries.
  6. Sprinkle the tops of the muffins with brown sugar.
  7. Bake muffins for 18-20 minutes until a toothpick comes clean from the center.
  8. Enjoy warm with butter and Dunkin’ Donuts Original Blend Coffee.
