Easy Cheeseburger Soup is a hearty and flavorful soup that combines the classic taste of a cheeseburger in a comforting soup form.

- 5 pieces of bacon, cut into small pieces
- 1 lb ground beef
- 1/4 cup butter
- 1/4 cup onion, diced
- 2 sticks celery, diced
- 1/2 teaspoon minced garlic
- 6 tablespoons flour
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Worcestershire sauce
- 1 lb Yukon potatoes, peeled & diced small
- 2 cups sharp cheddar cheese shredded
- Salt & pepper to taste
- 1/4 cup pickles diced, optional
Instructions
- Cook bacon in a soup pot until crispy. Transfer to a plate.
- Cook ground beef in the same pot until browned. Drain fat and place on a plate.
- Melt butter in the pot, then sauté onion and celery for 4-5 minutes.
- Mix in garlic and flour, cooking for about 2 minutes while stirring.
- Gradually whisk in chicken broth until smooth.
- Stir in cream, Worcestershire sauce, potatoes, and beef. Bring to a boil, then simmer for 15 minutes, or until potatoes are tender.
- Turn off heat and gradually mix in cheddar. Add more broth, milk, or cream if needed.
- Stir in most of the bacon, reserving some for garnish. Season with salt and pepper. Mix in chopped pickles or use as a topping.
Notes
- Adjust the amount of cheese to your preference.
- For a smoother soup, use an immersion blender to partially blend the soup before adding the cheese.
- Garnish with extra bacon, shredded cheese, and diced pickles.
