Make easy cucumber salad sandwiches for a refreshing meal.
Ingredients

- 1 cup diced English cucumber
- 1/8 tsp salt
- 2 tbsp low-fat Greek yogurt
- 2 tbsp crumbled feta cheese
- 1 tbsp chopped herbs (fresh dill and chives)
- 1/2 tsp fresh lemon juice
- 1/4 tsp grated lemon peel
- 1/8 tsp black pepper
- 4 slices whole-grain bread
- 2 thin slices red onion
- 1/2 cup alfalfa sprouts
Instructions
- Stir cucumber and salt in a bowl. Let stand for 10 minutes.
- Combine yogurt, feta, herbs, lemon zest, lemon juice, and pepper in a bowl. Mix well.
- Drain cucumbers and pat dry. Add to yogurt mixture and stir.
- Divide sprouts between two bread slices. Spread cucumber salad on sprouts. Place onion slice on each, then top with bread. Cut in half.
- Serve sandwiches immediately.
Notes
- Use Fage Greek yogurt for best results.
- Fresh dill and chives work well as herbs.
- Drain cucumbers well to avoid soggy sandwiches.
