Description

Make easy cucumber salad sandwiches for a refreshing meal.


Ingredients

Scale
  • 1 cup diced English cucumber
  • 1/8 tsp salt
  • 2 tbsp low-fat Greek yogurt
  • 2 tbsp crumbled feta cheese
  • 1 tbsp chopped herbs (fresh dill and chives)
  • 1/2 tsp fresh lemon juice
  • 1/4 tsp grated lemon peel
  • 1/8 tsp black pepper
  • 4 slices whole-grain bread
  • 2 thin slices red onion
  • 1/2 cup alfalfa sprouts

Instructions

  1. Stir cucumber and salt in a bowl. Let stand for 10 minutes.
  2. Combine yogurt, feta, herbs, lemon zest, lemon juice, and pepper in a bowl. Mix well.
  3. Drain cucumbers and pat dry. Add to yogurt mixture and stir.
  4. Divide sprouts between two bread slices. Spread cucumber salad on sprouts. Place onion slice on each, then top with bread. Cut in half.
  5. Serve sandwiches immediately.

Notes

  • Use Fage Greek yogurt for best results.
  • Fresh dill and chives work well as herbs.
  • Drain cucumbers well to avoid soggy sandwiches.
