- 1 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup molasses
- 1 large egg
- 1/2 cup hot water
- Icing: 1 cup powdered sugar, 2-3 tbsp milk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
- In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
- In a separate bowl, cream together butter and sugar until light and fluffy. Beat in molasses and egg.
- Gradually add dry ingredients to wet ingredients, alternating with hot water, beginning and ending with dry ingredients. Mix until just combined.
- Pour batter into prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool in pan for 10 minutes before inverting onto a wire rack to cool completely.
- For the icing, whisk together powdered sugar and milk until smooth. Drizzle over cooled cake.
Notes
- For a richer flavor, use dark molasses.
- Adjust the amount of milk in the icing to reach your desired consistency.
- Store leftover cake in an airtight container at room temperature.
