Ingredients
Scale
- 6 pounds ripe pears, peeled, cored, and quartered
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
Instructions
- Place the pears in a large pot or Dutch oven.
- Add the granulated sugar, brown sugar, lemon juice, cinnamon, ginger, cloves, and salt.
- Stir to combine.
- Bring the mixture to a simmer over medium heat, stirring occasionally.
- Reduce the heat to low, cover, and cook for 2-3 hours, or until the pears are very soft and easily mashable. Stir occasionally to prevent sticking.
- Remove from heat and let cool slightly.
- Use an immersion blender to puree the mixture until smooth. Alternatively, transfer the mixture to a regular blender in batches and blend until smooth.
- Return the pureed pear butter to the pot and cook over low heat for another 30-60 minutes, or until it has thickened to your desired consistency. Stir frequently to prevent sticking.
- Ladle the hot pear butter into sterilized jars, leaving 1/4 inch headspace.
- Process in a boiling water bath for 10 minutes.
- Let the jars cool completely before checking the seals.
Notes
- For a smoother texture, you can peel the pears before cooking.
- Adjust the amount of sugar to your liking, depending on the sweetness of the pears.
- You can add other spices, such as nutmeg or cardamom, to customize the flavor.
- Pear butter can be stored in the refrigerator for up to 2 weeks, or in the freezer for up to 3 months.
