Description

Make a simple, rich dark chocolate mousse without baking.


Ingredients

Scale
  • 6 ounces dark chocolate (60-70% cacao), chopped
  • 4 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Place chocolate in a heatproof bowl over simmering water. Heat until melted and smooth. Cool for 10 minutes.
  2. Whip cream and vanilla until stiff peaks form. Refrigerate.
  3. Beat egg whites with salt until soft peaks form. Add sugar, beat until stiff and glossy.
  4. Whisk egg yolks into cooled chocolate until smooth.
  5. Fold 1/3 of whipped cream into chocolate. Fold in remaining cream.
  6. Fold egg whites into chocolate in two additions. Stop when no streaks remain.
  7. Spoon into dishes. Chill for 4 hours.
  8. Serve cold.

Notes

  • Do not overmix the mousse.
