Description
Make a simple, rich dark chocolate mousse without baking.
Ingredients

- 6 ounces dark chocolate (60-70% cacao), chopped
- 4 large eggs, separated
- 1/4 cup granulated sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Place chocolate in a heatproof bowl over simmering water. Heat until melted and smooth. Cool for 10 minutes.
- Whip cream and vanilla until stiff peaks form. Refrigerate.
- Beat egg whites with salt until soft peaks form. Add sugar, beat until stiff and glossy.
- Whisk egg yolks into cooled chocolate until smooth.
- Fold 1/3 of whipped cream into chocolate. Fold in remaining cream.
- Fold egg whites into chocolate in two additions. Stop when no streaks remain.
- Spoon into dishes. Chill for 4 hours.
- Serve cold.
Notes
- Ensure the bowl is heatproof.
- Do not overmix the mousse.
- Chill the mousse thoroughly.
