  • 23 tbsp strawberry puree or jam (optional)

Instructions

  1. Beat cream cheese, 1/4 cup sugar, vanilla extract, and egg yolk until smooth.
  2. Scoop tablespoon-sized portions onto a parchment-lined plate and freeze for 30 minutes.
  3. Whisk together flour, graham cracker crumbs, baking powder, and salt in a large bowl.
  4. In another bowl, beat butter and 1 cup sugar until light and fluffy.
  5. Beat in egg and vanilla extract until combined.
  6. Gently mix dry ingredients into wet ingredients until a soft dough forms.
  7. Fold in crushed freeze-dried strawberries.
  8. Flatten 2 tablespoons of cookie dough in your palm.
  9. Place a frozen cream cheese ball in the center.
  10. Wrap the dough around the filling, pinching the seams to seal.
  11. Roll into a smooth ball and place on a baking sheet.
  12. Refrigerate the baking sheet for 15-20 minutes.
  13. Preheat oven to 350°F (175°C).
  14. Bake for 12-15 minutes until edges are set and centers are soft.
