Ingredients

Scale
  • 1 1/2 cups fresh milled whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 2 tablespoons melted butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup vegetable oil (for frying)
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon cinnamon (for coating)

Instructions

  1. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  2. In a separate bowl, combine granulated sugar, brown sugar, pumpkin puree, milk, melted butter, egg, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  4. Heat vegetable oil in a large pot or deep fryer to 350°F (175°C).
  5. Drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pot.
  6. Fry for 2-3 minutes per side, or until golden brown.
  7. Remove donuts from the oil and place on a wire rack to cool slightly.
  8. In a small bowl, combine sugar and cinnamon for coating.
  9. While the donuts are still warm, toss them in the cinnamon sugar mixture to coat.
  10. Serve immediately and enjoy your fresh donuts.

Notes

  • For best results, use a thermometer to monitor the oil temperature.
  • Adjust spices to your preference.
