Description

Warm and comforting Gingerbread Cake with Cinnamon Molasses, perfect for the holidays.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup unsulphured molasses
  • 1 large egg
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy.
  4. Beat in molasses and egg.
  5. Gradually add dry ingredients to wet ingredients, alternating with buttermilk, beginning and ending with dry ingredients. Mix until just combined.
  6. Stir in vanilla extract.
  7. Pour batter into prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let cool in pan for 10 minutes before frosting.

Notes

  • For a richer flavor, use dark molasses.
  • You can substitute sour cream for buttermilk.
  • Store leftover cake in an airtight container at room temperature.
