- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1 cup molasses
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup hot water
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, cloves, nutmeg, and salt.
- In a separate bowl, combine sugar, molasses, oil, and eggs. Beat well.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Stir in the hot water until the batter is smooth.
- Pour batter into the prepared loaf pan.
- Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For a richer flavor, use dark molasses.
- You can add chopped nuts or dried fruit to the batter.
- Store in an airtight container at room temperature.
