- 1/2 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 2 1/4 cups all-purpose gluten-free flour
- 1/2 teaspoon xanthan gum (omit if in flour)
- 3/4 cup finely chopped nuts (pecans recommended)
- 1/4 teaspoon salt
- Powdered sugar for rolling
Instructions
- Preheat oven to 400°F.
- Cream butter, vanilla extract, and powdered sugar in a large bowl.
- Add gluten-free flour, xanthan gum (if needed), salt, and nuts. Mix until combined.
- Shape dough into 1-inch balls using a tablespoon or cookie scoop. Place on parchment-lined sheet, 1 inch apart.
- Freeze for 5 minutes.
- Bake for 10-12 minutes, until set. Watch carefully.
- Cool for 3-5 minutes. Roll warm cookies in powdered sugar.
- Cool completely and roll in powdered sugar again.
- Store in an airtight container.
Notes
- Use a good quality gluten-free flour blend for best results.
- Finely chop nuts in a food processor for even distribution.
- Do not overbake the cookies.
