Individual pumpkin cheesecakes that are healthy and delicious.
Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/3 cup melted butter
- 2 (8 ounce) packages cream cheese, softened
- 1 1/2 cups pumpkin puree
- 1 cup sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 2 large eggs
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan or individual ramekins.
- In a large bowl, beat cream cheese until smooth. Add pumpkin puree, 1 cup sugar, pumpkin pie spice, and vanilla extract. Beat until well combined.
- Add eggs one at a time, mixing well after each addition.
- Pour filling over crust.
- Bake for 50-60 minutes, or until set. For individual ramekins, bake for 25-30 minutes.
- Let cool completely before refrigerating.

- For a smoother cheesecake, ensure cream cheese is fully softened.
- Adjust baking time based on your oven.
