Description

These holiday muffins are perfect for Thanksgiving desserts. They are easy to make and delicious.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts
  • 1/2 cup dried cranberries

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Grease muffin tin or use muffin liners.
  3. In a large bowl, mix flour, sugar, salt, and baking powder.
  4. In a separate bowl, whisk together oil, egg, milk, and vanilla.
  5. Add wet ingredients to dry ingredients and stir until just combined.
  6. Fold in nuts and cranberries.
  7. Fill muffin cups 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • You can use different types of nuts or dried fruit.
  • Store in an airtight container at room temperature.
