- 4 cups (500g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1 tablespoon (10g) salt
- 1 tablespoon (10g) active dry yeast
- 1 1/4 cups (300ml) warm milk
- 2 tablespoons unsalted butter, melted
- 1 cup (225g) unsalted butter, cold and shaped into a flat square
- 1 egg
- 1 tablespoon milk
Instructions
- Mix flour, sugar, and salt in a bowl.
- Dissolve yeast in warm milk. Let it sit for 5-10 minutes.
- Add milk-yeast and melted butter to dry ingredients. Knead until smooth.
- Shape dough into a rectangle. Wrap and refrigerate for 1 hour.
- Shape cold butter into a 6-inch square.
- Roll chilled dough into a 12-inch square.
- Place butter block diagonally in the center.
- Fold dough corners over butter.
- Roll into an 8×20 inch rectangle.
- Fold into thirds. Wrap and chill for 30 minutes.
Notes
- Ensure butter is cold but pliable.
- Chill dough properly between turns.
