Instructions

  1. Prepare Oats: In a mixing bowl, combine rolled oats with warm water. Let it sit for about 10 minutes to soften.
  2. Activate Yeast: In a separate bowl, mix honey and yeast. Allow it to sit for about 5 minutes until foamy.
  3. Combine Ingredients: Add the softened oats, salt, and cinnamon to the yeast mixture. Stir well to combine.
  4. Add Flour: Gradually add the flour, one cup at a time, mixing until a dough begins to form. You may need more or less flour depending on humidity.
  5. Knead the Dough: Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  6. First Rise: Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  7. Shape the Loaf: After rising, punch the dough down and transfer it to a floured surface. Shape it into a loaf and place it in a greased loaf pan.
  8. Second Rise: Cover the loaf with a towel and let it rise for another 30-45 minutes until it puffs up.
  9. Preheat Oven: During the second rise, preheat your oven to 350°F (175°C).
  10. Bake: When the dough has risen, bake it in the preheated oven for 30-40 minutes, or until the top is golden brown and sounds hollow when tapped.
  11. Cool: Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
