Description

Ingredients

  • 2 tbsp Butter
  • 4 ounces Cream Cheese (softened)
  • 1/3 cup Heavy Whipping Cream
  • 1 1/2 cups Shredded Cheddar Cheese
  • 4 large Low-Carb Tortillas
  • 4 Small Street-Taco Size Low-Carb Tortillas
  • 3 tbsp Olive Oil (Divided)
  • 1 pound Ground Beef
  • 2 tsp Taco Seasoning
  • 4 tbsp Sour Cream
  • 1 cup Shredded Lettuce
  • 1 small Tomato (chopped)
  • 1/2 cup Shredded Cheddar Cheese

Instructions

  1. Add the butter, cream cheese, and heavy whipping cream to a food processor and blend until smooth.
  2. Transfer to a saucepan over medium heat and melt until smooth.
  3. Stir in shredded cheddar until melted. Set aside for cheese sauce.
  4. Brown the ground beef in a skillet, drain excess fat.
  5. Add taco seasoning and sauté for the meat filling.
  6. Toast small tortillas in olive oil until crispy.
  7. Place large tortillas on a flat surface.
  8. Add meat, cheese sauce, small tortilla, sour cream, lettuce, tomato, and shredded cheddar.
  9. Fold edges of large tortilla over filling.
  10. Cook in oil until crispy.

Notes

  • Adjust taco seasoning to your spice preference.
  • Use your favorite low-carb toppings.
