Description

Enjoy moist and flavorful Lemon Blueberry Muffins. This recipe combines fresh blueberries with a hint of lemon for a delightful treat.


Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ⅓ cup vegetable oil
  • 2 eggs
  • ½ cup yogurt or sour cream
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 ½ cups blueberries
  • 1 tbsp flour for coating blueberries

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. Whisk dry ingredients in one bowl.
  3. Mix oil, eggs, yogurt, lemon juice, zest, and vanilla in another.
  4. Combine wet and dry ingredients until just mixed.
  5. Toss blueberries with flour and fold into batter.
  6. Divide into muffin cups and bake 18–22 minutes.
  7. Cool on rack and serve warm.

Notes

  • Use fresh or frozen blueberries.
  • Do not overmix the batter.
  • Adjust baking time based on your oven.
