- 1/4 teaspoon salt
- 1 cup water
- 1/2 cup lemon juice, fresh
- 4 large egg yolks, lightly beaten

- 4 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar
Instructions
- Preheat oven to 350°F (175°C).
- Make the crust: Combine flour, butter, powdered sugar, and salt in a bowl. Cut butter into flour until mixture resembles coarse crumbs. Add ice water and mix until dough comes together.
- Press dough into the bottom of a 9×13 inch baking pan.
- Bake for 15-20 minutes, or until lightly golden.
- Make the lemon filling: In a saucepan, whisk together granulated sugar, cornstarch, and salt.
- Gradually whisk in water and lemon juice.
- Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens.
- Remove from heat and whisk in egg yolks, butter, and lemon zest.
- Pour lemon filling over baked crust.
- Make the meringue: In a clean, dry bowl, beat egg whites and cream of tartar until soft peaks form.
- Gradually add granulated sugar, beating until stiff, glossy peaks form.
- Spread meringue over lemon filling, making sure to seal to the edges of the crust.
- Bake for 12-15 minutes, or until meringue is golden brown.
- Let cool completely before cutting into bars.
Notes
- For best results, use cold butter and ice water when making the crust.
- Make sure the meringue seals to the crust to prevent weeping.
