Description

A rich and decadent chocolate cake inspired by Matilda.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup boiling water
  • Chocolate frosting

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add milk, oil, vanilla extract, and egg. Beat until well combined.
  4. Gradually add boiling water, mixing until batter is smooth.
  5. Pour batter into prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Let cake cool in pan for 10 minutes before inverting onto a wire rack to cool completely.
  7. Frost with your favorite chocolate frosting.

Notes

  • For a richer flavor, use dark cocoa powder.
  • Add chocolate chips to the batter for extra chocolate.
  • Serve with a scoop of vanilla ice cream.
