Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or grease it well.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. In a separate bowl, beat the egg. Stir in vegetable oil, vanilla extract, and buttermilk until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently just until combined—some lumps are okay.
  5. Fold in the diced apples until evenly distributed throughout the batter.
  6. In another bowl, combine flour, brown sugar, ground cinnamon, melted butter, and a pinch of salt. Mix until crumbly.
  7. Evenly distribute the muffin batter among the prepared muffin cups, filling each about 2/3 full.
  8. Sprinkle the crumb topping generously over each muffin.
  9. Place in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  10. Remove from the oven and let the muffins cool in the pan for about 5-10 minutes before transferring them to a wire rack to cool completely.
