- ½ cup vegetable oil

- ½ cup buttermilk
- 1 ½ cups peeled and diced apples (about 2 medium apples)
Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or grease it well.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
- In a separate bowl, beat the egg. Stir in vegetable oil, vanilla extract, and buttermilk until well combined.
- Pour the wet ingredients into the dry ingredients. Stir gently just until combined—some lumps are okay.
- Fold in the diced apples until evenly distributed throughout the batter.
- In another bowl, combine flour, brown sugar, ground cinnamon, melted butter, and a pinch of salt. Mix until crumbly.
- Evenly distribute the muffin batter among the prepared muffin cups, filling each about 2/3 full.
- Sprinkle the crumb topping generously over each muffin.
- Place in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let the muffins cool in the pan for about 5-10 minutes before transferring them to a wire rack to cool completely.
