Description

Easy no-bake pumpkin lush dessert with layers of graham crackers, cream cheese, pumpkin, and Cool Whip.


Ingredients

  • 1 package (14.4 oz) graham crackers
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 can (15 oz) pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1 container (8 oz) Cool Whip, thawed
  • 1/4 cup chopped pecans (optional)

Instructions

  1. In a 9×13 inch dish, arrange a layer of graham crackers to cover the bottom.
  2. In a large bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  3. In a separate bowl, combine pumpkin puree and pumpkin pie spice.
  4. Gently fold the pumpkin mixture into the cream cheese mixture.
  5. Spread half of the Cool Whip over the graham cracker layer.
  6. Spread the pumpkin cream cheese mixture over the Cool Whip.
  7. Top with the remaining Cool Whip.
  8. Sprinkle with chopped pecans, if desired.
  9. Cover and refrigerate for at least 4 hours before serving.

Notes

  • For a richer flavor, use full-fat cream cheese.
  • You can substitute the graham crackers with vanilla wafers.
  • The dessert can be made a day ahead of time.
