Ingredients

  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped dried peaches

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the chopped dried peaches.
  7. Drop by rounded tablespoons onto ungreased baking sheets.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a stronger peach flavor, use peach extract in addition to the dried peaches.
  • Store cookies in an airtight container at room temperature.
  • You can substitute fresh peaches for dried peaches, but be sure to chop them finely and pat them dry before adding them to the dough.
