- 1 cup creamy peanut butter
- 4 tablespoons unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 1/2 cups powdered sugar
- 2 cups semi-sweet or milk chocolate chips
- 1 tablespoon coconut oil (optional, for smoother melting)
Instructions
- In a large bowl, beat peanut butter and softened butter until smooth.
- Mix in vanilla extract and gradually add powdered sugar until a thick dough forms.
- Scoop portions of the mixture and shape into small egg forms. Place on a parchment-lined baking sheet.
- Refrigerate the peanut butter eggs for 30–60 minutes until firm.
- In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
- Using a fork, dip each peanut butter egg into melted chocolate until fully coated. Let excess chocolate drip off.
- Place dipped eggs back onto parchment paper and refrigerate until chocolate hardens.

- For best results, use high-quality chocolate.
- Store the finished eggs in the refrigerator.
- Adjust the amount of powdered sugar to achieve desired consistency.
