Ingredients

  • 3 ripe pears, peeled and halved
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, combine granulated sugar, brown sugar, oil, eggs, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Pour half of the batter into the prepared loaf pan. Arrange pear halves on top, cut-side up.
  6. Pour the remaining batter over the pears.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
