Ingredients

  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 cup unsalted butter, at cool room temperature
  • 1 1/2 cups light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups chopped peppermint bark, divided
  • 1 cup semi-sweet chocolate chips
  • Flaked sea salt, for sprinkling on cookies

Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and sea salt in a bowl.
  3. Cream butter and sugars together using a mixer. Add eggs and vanilla, mix until combined. Slowly add dry ingredients. Stir in 1 1/2 cups peppermint bark and chocolate chips.
  4. Form dough into balls. Place on baking sheet, 2 inches apart. Sprinkle with sea salt.
  5. Bake for 10-12 minutes or until edges are golden brown. Cool on baking sheet for 2-3 minutes.
  6. Gently push remaining 1/2 cup peppermint bark into tops of cookies. Transfer to wire rack and cool completely.
