- 3 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon sea salt
- 1 cup unsalted butter, at cool room temperature
- 1 1/2 cups light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 2 cups chopped peppermint bark, divided
- 1 cup semi-sweet chocolate chips
- Flaked sea salt, for sprinkling on cookies
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
- Whisk together flour, baking powder, baking soda, and sea salt in a bowl.
- Cream butter and sugars together using a mixer. Add eggs and vanilla, mix until combined. Slowly add dry ingredients. Stir in 1 1/2 cups peppermint bark and chocolate chips.
- Form dough into balls. Place on baking sheet, 2 inches apart. Sprinkle with sea salt.
- Bake for 10-12 minutes or until edges are golden brown. Cool on baking sheet for 2-3 minutes.
- Gently push remaining 1/2 cup peppermint bark into tops of cookies. Transfer to wire rack and cool completely.
