- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- For the Frosting:
- 4 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–4 tablespoons milk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine pumpkin puree, sugar, oil, eggs, and vanilla. Mix well.
- In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan before frosting.
- For the frosting: In a large bowl, beat cream cheese and butter until smooth and creamy.
- Gradually add powdered sugar and vanilla extract, mixing until well combined.
- Add milk, one tablespoon at a time, until the frosting reaches your desired consistency.
- Spread the frosting evenly over the cooled pumpkin bars.
- Cut into squares and serve.
Notes
- You can add chopped nuts or chocolate chips to the batter for extra flavor.
