- 1 package (8 ounces) cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1 package (14.3 ounces) graham cracker squares
- Whipped cream, for topping (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, beat cream cheese and sugar until smooth.
- Stir in pumpkin puree, pumpkin pie spice, and vanilla extract until well combined.
- Place graham cracker squares on a baking sheet.
- Top each graham cracker square with a spoonful of pumpkin cheesecake mixture.
- Bake for 8-10 minutes, or until set.
- Let cool completely. Top with whipped cream before serving, if desired.
Notes
- For a smoother filling, make sure your cream cheese is fully softened.
- You can add a sprinkle of cinnamon on top before baking.
- Store leftover cheesecake bites in the refrigerator.
