Description

Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 package (14.3 ounces) graham cracker squares
  • Whipped cream, for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, beat cream cheese and sugar until smooth.
  3. Stir in pumpkin puree, pumpkin pie spice, and vanilla extract until well combined.
  4. Place graham cracker squares on a baking sheet.
  5. Top each graham cracker square with a spoonful of pumpkin cheesecake mixture.
  6. Bake for 8-10 minutes, or until set.
  7. Let cool completely. Top with whipped cream before serving, if desired.

Notes

  • For a smoother filling, make sure your cream cheese is fully softened.
