Description

Soft and chewy pumpkin sugar cookies topped with a tangy cream cheese frosting.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda

Frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 24 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the pumpkin puree, vanilla, and pumpkin pie spice.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop by rounded tablespoons onto ungreased baking sheets.
  7. Bake for 10-12 minutes, or until edges are lightly golden.
  8. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  9. Frosting:

  11. Gradually add the powdered sugar, beating until smooth.
  12. Stir in the vanilla extract.
  13. Add milk, 1 tablespoon at a time, until desired consistency is reached.
