Description

A hearty and flavorful Pumpkin White Bean Chili.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (15-ounce) can pumpkin puree
  • 1 (15-ounce) can white beans, rinsed and drained
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and red bell pepper and cook for 2 minutes more.
  4. Stir in pumpkin puree, white beans, diced tomatoes, vegetable broth, chili powder, cumin, and smoked paprika.
  5. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  6. Season with salt and pepper to taste.
  7. Serve hot with your favorite toppings.

Notes

  • Adjust spices to your preference.
  • Add more vegetable broth for a thinner chili.
  • This chili can be made ahead of time and reheated.
