- 1/2 cup chilled unsalted butter (cut into 1/2-inch cubes)
- 2 tbsp milk
- 1/4 tsp salt
- 3/4 cup granulated sugar
- 1/2 tsp baking powder
- 1 egg (large, room temperature)
- 1 3/4 cups all-purpose flour
- 2 tbsp cornstarch
- 2 1/4 cups fresh pitted cherries
- 3 tbsp granulated sugar
Instructions
- Preheat your oven to 375°F. Line an 8×8 or 9×9 baking dish with parchment paper and spray the sides.
- In a large bowl, combine flour, sugar, baking powder, and salt.
- Grate cold butter into the bowl and mix until it resembles small pebbles.
- Add egg and milk; stir until well combined.
- Press 2/3 of the dough into the baking dish to form an even crust.
- Mash cherries in a medium bowl.
- Strain excess liquid from cherries, then return them to the bowl. Stir in sugar and cornstarch.
- Spread cherry mixture over the crust.
- Sprinkle remaining dough over the cherries to create a crumb topping.
- Bake for 32-36 minutes, until golden brown.
- Cool completely before serving.
Notes
- Use room temperature eggs for better emulsion.
- Strain excess liquid from cherries to prevent a soggy filling.
- Cool completely before cutting for cleaner slices.
