Description

Quick Cherry Crumble Bars are sweet and easy to make. You can enjoy these bars with your family and friends.


Ingredients

  • 1/2 cup chilled unsalted butter (cut into 1/2-inch cubes)
  • 2 tbsp milk
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 1/2 tsp baking powder
  • 1 egg (large, room temperature)
  • 1 3/4 cups all-purpose flour
  • 2 tbsp cornstarch
  • 2 1/4 cups fresh pitted cherries
  • 3 tbsp granulated sugar

Instructions

  1. Preheat your oven to 375°F. Line an 8×8 or 9×9 baking dish with parchment paper and spray the sides.
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. Grate cold butter into the bowl and mix until it resembles small pebbles.
  4. Add egg and milk; stir until well combined.
  5. Press 2/3 of the dough into the baking dish to form an even crust.
  6. Mash cherries in a medium bowl.
  7. Strain excess liquid from cherries, then return them to the bowl. Stir in sugar and cornstarch.
  8. Spread cherry mixture over the crust.
  9. Sprinkle remaining dough over the cherries to create a crumb topping.
  10. Bake for 32-36 minutes, until golden brown.
  11. Cool completely before serving.

Notes

  • Use room temperature eggs for better emulsion.
  • Strain excess liquid from cherries to prevent a soggy filling.
  • Cool completely before cutting for cleaner slices.
