Description
Elegant dessert featuring pears poached in red wine, topped with chocolate ganache, and a sprinkle of sea salt.
Ingredients

- 4 ripe pears, peeled
- 1 bottle (750ml) red wine
- 1 cup granulated sugar
- 1 cinnamon stick
- 2 star anise
- 1 orange, zest and juice
- 8 ounces dark chocolate, chopped
- 1/2 cup heavy cream
- Sea salt, for sprinkling
Instructions
- Combine red wine, sugar, cinnamon stick, star anise, and orange zest and juice in a pot.
- Bring to a simmer over medium heat.
- Gently place pears in the wine mixture.
- Poach for 20-30 minutes, or until pears are tender.
- Remove pears and set aside.
- Boil wine mixture until reduced by half.
- Remove from heat and let cool.
- For the ganache, heat heavy cream in a saucepan.
- Pour over chopped chocolate and let sit for 1 minute.
- Stir until smooth.
- Dip poached pears in chocolate ganache.
- Sprinkle with sea salt.
- Chill for at least 30 minutes before serving.
Notes
- Serve chilled or at room temperature.
- Garnish with fresh mint, if desired.
- Use high-quality dark chocolate for best results.
