Instructions
- Prepare sushi rice according to package directions. Let cool.
- Whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Spread a thin layer of rice on a sheet of plastic wrap.
- Spread a layer of whipped cream over the rice.
- Arrange sliced strawberries and a line of strawberry jam in the center.
- Carefully roll the rice and cream around the strawberry filling, using the plastic wrap to help shape it.
- Refrigerate for at least 30 minutes.
- Unwrap and slice into sushi-sized pieces.
- Garnish with shredded coconut.

- Use fresh, ripe strawberries for the best flavor.
- You can substitute other berries or fruits for the strawberries.
- For a richer flavor, add a layer of cream cheese to the whipped cream.
