Delicious and healthy sweet potato brownies.
Ingredients

- 1 cup cooked sweet potato, mashed
- 1/2 cup unsweetened cocoa powder
- 1/4 cup almond flour
- 1/4 cup maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Grease or line an 8×8 inch baking pan.
- In a large bowl, combine mashed sweet potato, cocoa powder, almond flour, maple syrup, eggs, and vanilla extract. Mix well.
- Add baking soda and salt. Mix until just combined.
- Stir in chocolate chips, if using.
- Pour batter into the prepared pan and spread evenly.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let cool completely before cutting into squares.
Notes
- Adjust sweetness to your liking.
- Store in an airtight container in the refrigerator.
