Description

Delicious and healthy sweet potato brownies.


Ingredients

  • 1 cup cooked sweet potato, mashed
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup almond flour
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease or line an 8×8 inch baking pan.
  3. In a large bowl, combine mashed sweet potato, cocoa powder, almond flour, maple syrup, eggs, and vanilla extract. Mix well.
  4. Add baking soda and salt. Mix until just combined.
  5. Stir in chocolate chips, if using.
  6. Pour batter into the prepared pan and spread evenly.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. Let cool completely before cutting into squares.
