Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup sour cream or yogurt
  • 12 teaspoons powdered sugar
  • Pink or red food coloring or raspberry puree

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan. Bake 8–10 minutes and cool.
  2. Beat cream cheese until smooth. Add sugar, then eggs one at a time. Mix in vanilla, sour cream, flour, and salt just until combined.
  3. Pour cheesecake batter over the cooled crust and smooth the top.
  4. Mix sour cream with powdered sugar and tint pink. Drop small dots on top and drag a toothpick through each to form hearts.
  5. Bake 50–55 minutes until edges are set and the center slightly jiggles. Turn off oven, crack door, and rest 10 minutes.
  6. Cool completely, then refrigerate at least 4 hours or overnight before serving.
