Description

Ingredients

  • 1 tsp baking soda
  • 1 tsp ground cinnamon

  • 1 cup unsweetened applesauce
  • 1 cup granulated sugar
  • 1/2 cup vegan butter, softened
  • 1/4 cup vegan caramel sauce, plus more for drizzling
  • 2 tsp vanilla extract
  • 2 cups peeled and diced apples

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, cream together applesauce, sugar, vegan butter, caramel sauce, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the diced apples.
  6. Pour batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Drizzle with additional vegan caramel sauce before serving.
